Vitapep stuffed with Greek salad

Cut the feta into small cubes

Halve the Amante tomatoes, remove the seeds (the soft part) and finely chop the flesh

Wash and dry the cucumber but do not peel it. Halve the cucumber and scrape out the seeds (the soft part) with a spoon. If necessary, pat the cucumber dry with a piece of kitchen paper. Cut the cucumber into small cubes

Chop the olives or slice into rings

Pick the leaves off the parsley and chop the stalks. Keep a few leaves aside for garnish

Mix the feta with the tomatoes, cucumber, olives, parsley and pepper in a bowl and briefly fold with a spoon. It is best if everything still holds its shape

Take one half of the Vitapep snack peppers, halve them lengthwise and remove the seeds. Cut the caps off the remaining Vitapep snack peppers and remove the seeds

Brush the halved Vitapep snack peppers with some tapenade and spoon the Greek salad on top. Also spoon some tapenade into the Vitapep snack peppers with the caps cut off, followed by the Greek salad

Finally, garnish with some lemon zest and a parsley leaf. Serve immediately!
